Preparing the Chicken

    Season the Chicken

    In a large bowl, combine the smoked paprika, salt, black pepper, garlic powder, and onion powder. Add the chicken thighs and rub the spice mixture all over the chicken.

    Smoke the Chicken

    Preheat your smoker to 225°F (107°C). Place the seasoned chicken thighs in the smoker and smoke for about 2-3 hours, or until the internal temperature reaches 165°F (74°C).

    Shred the Chicken

    Remove the chicken from the smoker and let it rest for 10-15 minutes. Then, using two forks, shred the chicken into bite-sized pieces.

    In a mixing bowl, combine the shredded chicken with the BBQ sauce, mixing until the chicken is evenly coated.

Assembling the Sandwich
