Method
Cooking the Quinoa
Rinse the Quinoa
Place 1 cup of quinoa in a fine mesh strainer and rinse under cold water for about 2 minutes. This helps remove the bitterness.
Cook the Quinoa
In a medium saucepan, combine the rinsed quinoa and 2 cups of vegetable broth. Bring to a boil, then reduce heat to low, cover, and let simmer for about 15 minutes until all the liquid is absorbed.
Fluff the Quinoa
Remove from heat, let it sit covered for 5 minutes. Then fluff with a fork and set aside.
Sautéing the Vegetables
Prepare the Vegetables
Dice the red bell pepper and zucchini into bite-sized pieces. Halve the cherry tomatoes and rinse the spinach.
Heat Olive Oil
In a large skillet, heat 2 tablespoons of olive oil over medium heat.
Sauté Vegetables
Add the diced bell pepper and zucchini to the skillet. Sauté for 5 minutes until they begin to soften. Then add the halved cherry tomatoes and sauté for an additional 3 minutes.
Add Spinach
Stir in the spinach and cook until wilted, about 2 minutes.
Seasoning and Combining
Add Garlic
Mince the garlic cloves and add them to the sautéed vegetables. Cook for another minute, stirring frequently to avoid burning.
Season the Mixture
Pour in 2 tablespoons of lemon juice, and season with 1 teaspoon of salt and 1 teaspoon of black pepper. Mix well.
Combine with Quinoa
Add the cooked quinoa to the skillet with vegetables. Mix thoroughly until everything is combined.
Garnish and Serve
Chop fresh parsley and sprinkle over the dish before serving.
