Method
Preparing the Pork Belly

Preheat Oven
Preheat your oven to 300°F (150°C).

Prepare Pork Belly
Score the skin of the pork belly in a crosshatch pattern, being careful not to cut into the meat.

Seasoning
Rub the pork belly all over with salt, black pepper, garlic powder, and smoked paprika. Make sure to get the seasoning into the scored lines.

Roasting
Place the pork belly in a roasting pan and drizzle with olive oil. Roast in the preheated oven for about 2 to 2.5 hours, or until the meat is tender.

Crisping the Skin
Increase the oven temperature to 450°F (230°C) and roast for an additional 30-45 minutes, or until the skin is crispy and golden brown.

Resting
Remove the pork belly from the oven and let it rest for 15 minutes before cutting it into bite-sized pieces.
Making the Spicy Aioli

Combine Ingredients
In a medium bowl, combine mayonnaise, sriracha sauce, lemon juice, minced garlic, and salt to taste.

Mix Well
Whisk the ingredients together until smooth and well blended.

Taste and Adjust
Taste the aioli and adjust the seasoning with more salt or sriracha as desired.
Serving

Plate the Pork Belly Bites
Cut the rested pork belly into bite-sized pieces and arrange them on a serving platter.

Serve the crispy pork belly bites warm with the spicy aioli on the side for dipping.
