Prepare the Brussels Sprouts
Rinse the Brussels sprouts under cold water. Trim the stem ends and remove any yellow or damaged leaves. Cut each Brussels sprout in half lengthwise.

Mince the Garlic
Peel and mince the garlic cloves finely.

Preheat the Oven
Preheat your oven to 425°F (220°C).

Toss Brussels Sprouts
In a large bowl, combine the halved Brussels sprouts, olive oil, salt, and black pepper. Toss well to ensure the sprouts are evenly coated.

Roast the Brussels Sprouts
Spread the Brussels sprouts in a single layer on a baking sheet. Roast in the preheated oven for about 20-25 minutes, or until they are crispy and golden brown, stirring halfway through.

Add Sauce and Garlic
In the last 5 minutes of roasting, add the minced garlic and sweet chili sauce to the Brussels sprouts. Toss well to combine, then return to the oven for the remaining time.
Serving

Garnish and Serve
Remove the Brussels sprouts from the oven, sprinkle with sesame seeds and chopped green onions. Serve warm as a side dish.
