Preparation and Cooking

    Prepare the Oysters

    Start by cleaning the oysters thoroughly under cold running water to remove any dirt or sand. Scrub the shells with a brush if necessary.

    Make the Garlic and Red Chile Butter

    In a small saucepan over low heat, melt the unsalted butter. Add minced garlic and red chile flakes, stirring occasionally until the garlic is fragrant but not browned, about 3 minutes. Remove from heat and set aside.

    Prepare the Gremolata

    Finely chop the fresh parsley and mix it with lemon zest and lemon juice in a small bowl. Set aside.

    Preheat the Grill

    Prepare your wood grill by lighting it up and allowing the flames to die down until you have a hot, steady heat. If using charcoal, let the coals burn until they are covered in white ash.

    Grill the Oysters

    Place the cleaned oysters on the grill, flat side up. Spoon a small amount of the garlic and red chile butter onto each oyster. Close the grill lid and cook for 5-7 minutes, or until the oysters begin to curl at the edges and the butter is bubbling.

    Remove the oysters from the grill and transfer them to a serving platter. Top each oyster with a sprinkle of gremolata. Serve immediately while they are hot.
