Preparing the Andouille

Cut the Andouille sausage into bite-sized pieces, about 1 inch thick.
Making the Beer Batter

In a large mixing bowl, whisk together the all-purpose flour, cornmeal, baking powder, salt, black pepper.

In a small bowl, combine honey, hot sauce, and black pepper. Stir until well mixed and set aside.
Frying the Corn Dog Bites

Heat the Oil
In a deep fryer or large pot, heat the vegetable oil to 350°F (175°C).

Batter the Sausage
Dip each piece of Andouille sausage into the beer batter, ensuring it is fully coated.

Carefully place the battered sausage pieces in the hot oil. Fry in batches to avoid overcrowding for about 3-4 minutes or until golden brown.
