Spicy Honey Sauce

For Frying

Method

Preparing the Andouille

  1. 1

    Slice the Sausage

Cut the Andouille sausage into bite-sized pieces, about 1 inch thick.

Making the Beer Batter

  1. 2

    Combine Dry Ingredients

In a large mixing bowl, whisk together the all-purpose flour, cornmeal, baking powder, salt, black pepper.

  2. 3

    Add Wet Ingredients

In a separate bowl, mix the beer and egg. Pour the wet ingredients into the dry mixture and stir until just combined. Do not overmix.

Making the Spicy Honey Sauce

  1. 4

    Mix Sauce Ingredients

In a small bowl, combine honey, hot sauce, and black pepper. Stir until well mixed and set aside.

Frying the Corn Dog Bites

  1. 5

    Heat the Oil

In a deep fryer or large pot, heat the vegetable oil to 350°F (175°C).

  2. 6

    Batter the Sausage

Dip each piece of Andouille sausage into the beer batter, ensuring it is fully coated.

  3. 7

    Fry the Bites

Carefully place the battered sausage pieces in the hot oil. Fry in batches to avoid overcrowding for about 3-4 minutes or until golden brown.

  4. 8

    Drain and Serve

Remove the corn dog bites from the oil and drain on paper towels. Serve hot with the spicy honey sauce.
