    Prepare the Potatoes

    Wash and peel the Russet potatoes. Slice them thinly (about 1/8 inch thick) using a mandoline or sharp knife.

    Soak and Dry Potatoes

    Soak the sliced potatoes in cold water for at least 30 minutes to remove excess starch. Drain and pat dry with paper towels.

    Heat the Oil

    In a large pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test it by dropping a slice of potato into the oil; it should sizzle.

    Fry the Potato Chips

    Carefully add the potato slices to the hot oil in batches, making sure not to overcrowd the pot. Fry until golden brown and crispy, about 3-4 minutes per batch.

    Season the Chips

    Using a slotted spoon, transfer the fried chips to a paper towel-lined plate to drain excess oil. While still hot, sprinkle with sea salt, paprika, garlic powder, onion powder, black pepper, and cayenne pepper.

    Combine Base Ingredients

    In a medium bowl, combine sour cream, mayonnaise, and buttermilk. Mix until smooth.

    Add Seasonings

    Add the minced jalapeno, dried dill weed, garlic powder, onion powder, salt, and black pepper. Mix until well combined.

    Chill the Dip

    Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow flavors to meld.

    In a small bowl or jar, mix together the apple cider vinegar and water. Set aside for serving.
