Mashing

Begin by heating 6 gallons of water to approximately 165°F (74°C). Add the Pale Malt and Crystal Malt to the heated water.

Steeping Grains

Allow the grains to steep in the heated water for about 60 minutes, maintaining a temperature of around 150-155°F (65-68°C). Stir occasionally.

Removing Grains

After 60 minutes, remove the grains from the liquid, sparging with hot water to extract as much sugar as possible. This liquid is now called wort.

Boiling the Wort

Bring the wort to a boil and add the bittering hops. Boil for 60 minutes, adding the flavor hops in the last 15 minutes of the boil.

Cooling the Wort

After the boil, cool the wort quickly to around 70°F (21°C) using a wort chiller or an ice bath.

Fermentation

Transfer the cooled wort to a sanitized fermentation vessel and pitch the yeast. Seal the vessel with an airlock.

Conditioning

Allow the beer to ferment for about 1-2 weeks, monitoring for bubbling in the airlock.

Bottling

Once fermentation is complete, add the priming sugar to the beer and gently stir. Bottle the beer and cap each bottle.

Carbonation

Let the bottles sit at room temperature for an additional 1-2 weeks to carbonate.
