    Prepare the Fish

    Rinse the fish fillets under cold water and pat dry with paper towels. Brush each fillet with olive oil, then season both sides with salt and black pepper.

    Grill the Fish

    Preheat the grill to medium-high heat. Place the seasoned fish fillets on the grill and cook for about 4-5 minutes on each side, or until the fish flakes easily with a fork. Remove from grill and keep warm.

Brown Butter Sauce

    Make the Brown Butter

    In a saucepan over medium heat, melt the unsalted butter. Once melted, add the sage leaves and chopped pecans. Continue to cook, stirring frequently, until the butter turns a golden brown color and has a nutty aroma, about 5-7 minutes. Remove from heat and stir in the cayenne pepper. Set aside.

Cayenne Stone Grits

    Prepare the Grits

    In a large saucepan, bring 4 cups of water to a boil. Stir in the stone grits and salt. Reduce heat to low and cook, stirring occasionally, for about 20-25 minutes or until the grits are tender and creamy.

    Finish the Grits

    Once the grits are cooked, stir in the cayenne pepper and heavy cream. Mix well and adjust seasoning if needed.

Haricots Verts

    Prepare the Haricots Verts

    Trim the ends of the haricots verts. In a medium pot, bring water to a boil, add a pinch of salt, and blanch the beans for 2-3 minutes until bright green and tender-crisp.

    Sauté the Haricots Verts

    Drain the haricots verts and toss them in a skillet with olive oil, salt, and black pepper. Sauté over medium heat for about 3-4 minutes until heated through.
