Prepare the Mash
Begin by heating 3 gallons of water in your brew kettle to 165°F (74°C). Add the Pale Malt and Crystal Malt to the water to create a mash.

Mash Rest
Hold the mash temperature at 152°F (67°C) for 60 minutes, stirring occasionally to ensure even heat distribution.

Sparging
After the mash rest, sparge the grains with 2 gallons of water heated to 170°F (77°C) to extract the sugars.

Boil the Wort
Bring the collected wort to a boil. Once boiling, add the Cascade Hops and boil for 60 minutes.

Add Flavor Hops
With 15 minutes left in the boil, add Citra Hops and Simcoe Hops for aroma and flavor.

Add Bittering Hops
At the start of the boil, add the Northern Brewer Hops for bittering.

Cool the Wort
After the boiling process is complete, cool the wort quickly using a wort chiller or an ice bath until it reaches 70°F (21°C).

Fermentation
Transfer the cooled wort to a sanitized fermentation vessel and pitch the yeast. Seal with an airlock and let it ferment for 1-2 weeks at 68-72°F (20-22°C).

Bottle Conditioning
After fermentation, dissolve the priming sugar in a small amount of water and add it to the beer. Bottle the beer and let it carbonate for 1-2 weeks at room temperature.
