Witbier Ingredients

Method

Witbier Brewing Directions

  1. 1

    Mashing the Grains

In a large brew kettle, heat 3 gallons of water to 160°F (71°C). Add the Pale Malt, Wheat Malt, and Flaked Wheat to the kettle and stir thoroughly.

  2. 2

    Steeping

Maintain the temperature at 150-155°F (65-68°C) for 60 minutes, stirring occasionally. This allows the grains to convert starches into fermentable sugars.

  3. 3

    Sparging

After the steeping time is complete, sparge the grains with the remaining 2 gallons of water heated to 170°F (77°C) to extract more sugars.

  4. 4

    Boiling

Bring the wort to a boil and add the Hallertau hops. Boil for 60 minutes, adding the dried orange peel and crushed coriander in the last 5 minutes of the boil.

  5. 5

    Cooling the Wort

After boiling, cool the wort quickly using a wort chiller or an ice bath until it reaches around 70°F (21°C).

  6. 6

    Fermentation

Transfer the cooled wort to a sanitized fermentation vessel. Add the Belgian Wit yeast and seal with an airlock. Allow to ferment at room temperature for 1-2 weeks.

  7. 7

    Bottling

Once fermentation is complete, siphon the beer into sanitized bottles, leaving about an inch of headspace. Cap the bottles and allow to carbonate for 1-2 weeks.

  8. 8

    Enjoy

Chill the bottles and enjoy your homemade Port City Optimal Wit!
