    Prepare the Frying Mixture

    In a shallow dish, combine cornmeal, all-purpose flour, cayenne pepper, salt, and black pepper. Mix well.

    Coat the Seafood

    For oysters, dip them in the beaten egg, then dredge in the cornmeal mixture. For shrimp and catfish, dip in egg, then coat with the cornmeal mixture.

    Heat the Oil

    In a large pot or deep fryer, heat oil to 350°F (175°C).

    Fry the Seafood

    Fry oysters for about 2-3 minutes until golden brown. Fry shrimp for 3-4 minutes until pink and cooked through. Fry catfish fillets for 4-5 minutes until golden and cooked through. Remove from oil and drain on paper towels.

    Make the Cayenne Aioli

    In a bowl, combine mayonnaise, lemon juice, minced garlic, and cayenne pepper. Mix until smooth. Adjust seasoning to taste.

    Assemble the Po'Boys

    Slice the French bread or hoagie rolls lengthwise. Spread a generous layer of cayenne aioli on the bottom half. Layer with shredded lettuce, diced onion, house pickles, and your choice of fried seafood.

    Serve

    Close the sandwich, slice in half if desired, and serve with house cut fries on the side.
