Chowder Preparation

    Cook the Bacon

    In a large pot, cook the diced double smoked bacon over medium heat until crispy. Remove the bacon from the pot and set aside, leaving the rendered fat in the pot.

    Sauté Vegetables

    In the same pot with the bacon fat, add the diced onion, garlic, and poblano pepper. Sauté over medium heat until the onion is translucent, about 5 minutes.

    Add Potatoes and Corn

    Add the diced potatoes and corn kernels to the pot, stirring to combine with the sautéed vegetables. Cook for an additional 3-4 minutes.

    Add Broth and Seasonings

    Pour in the chicken broth, and add the chopped clams, dried thyme, black pepper, and salt. Bring the mixture to a boil, then reduce heat to low and let simmer for 15-20 minutes, or until the potatoes are tender.

    Stir in Cream

    Once the potatoes are cooked, stir in the heavy cream and let the chowder heat through for another 5 minutes. Adjust seasoning with salt and pepper to taste.

    Serve

    Ladle the chowder into bowls, and top with crispy bacon and croutons before serving.
