Chili Glazed Sweet Potatoes

Preparing the Dirty Rice

    Sauté the Aromatics

    In a large pot, heat a tablespoon of olive oil over medium heat. Add the chopped onion, green bell pepper, and celery. Sauté until the vegetables are softened, about 5 minutes.

    Add Garlic and Sausage

    Stir in the minced garlic and sliced Andouille sausage. Cook for an additional 3-4 minutes until the sausage is browned.

    Cook the Rice

    Add the jasmine rice to the pot, stirring to combine. Pour in the chicken broth, and bring to a boil. Reduce heat to low, cover, and simmer for 20 minutes or until the rice is tender and the liquid is absorbed.

    Incorporate Oysters and Spinach

    Once the rice is cooked, fold in the oysters and spinach. Cook for an additional 5 minutes until the oysters are plump and cooked through, and the spinach is wilted. Season with salt and pepper to taste.

    Preheat the Oven

    Preheat your oven to 400°F (200°C).

    Prepare the Sweet Potatoes

    Peel and dice the sweet potatoes into bite-sized cubes. In a mixing bowl, toss the sweet potatoes with olive oil, chili powder, honey, salt, and black pepper until evenly coated.

    Roast the Sweet Potatoes

    Spread the sweet potatoes in a single layer on a baking sheet. Roast in the preheated oven for 25-30 minutes, turning halfway through, until they are tender and slightly caramelized.
