Brewing Directions
- 1
Prepare the Mash
In a large mash tun, combine the 20 liters of water and 4 kg of malted barley. Heat the mixture to 65°C (149°F) and maintain this temperature for 60 minutes to allow the enzymes in the malt to convert starches into sugars.
- 2
Add Flaked Corn
After the mash has rested for an hour, add 1 kg of flaked corn to the mixture and continue to maintain the temperature for another 30 minutes.
- 3
Lautering
Once the mashing process is complete, begin lautering by draining the liquid wort from the mash tun. Sparge with additional hot water to extract as much sugar as possible from the grains.
- 4
Boiling the Wort
Transfer the wort to a brew kettle and bring it to a boil. Once boiling, add 50 grams of Saaz hops and boil for 60 minutes, stirring occasionally.
- 5
Cooling the Wort
After boiling, cool the wort quickly using a wort chiller or an ice bath until it reaches about 20°C (68°F).
- 6
Fermentation
Transfer the cooled wort to a fermentation vessel. Add 11 grams of American ale yeast and seal the vessel. Allow it to ferment at around 18-20°C (64-68°F) for 1-2 weeks.
