Preparation

    Prepare the Oysters

    Preheat your oven to 450°F (230°C). Carefully shuck the fresh oysters and place them on a broiler-safe baking sheet. Make sure to leave the oyster meat in the shell.

    Cook the Bacon

    In a skillet over medium heat, cook the bacon slices until they are crispy. Remove from the skillet and let them cool on a paper towel. Once cooled, crumble the bacon into small pieces.

    Sauté the Spinach

    In the same skillet with the bacon drippings, add the butter and minced garlic. Sauté for about 1 minute until fragrant, then add the spinach. Cook until wilted, approximately 2-3 minutes. Season with salt and black pepper to taste.

    Mix the Filling

    In a mixing bowl, combine the sautéed spinach, crumbled bacon, breadcrumbs, Parmesan cheese, lemon juice, and chopped parsley. Mix well until all ingredients are incorporated.

    Fill the Oysters

    Spoon the filling mixture generously onto each shucked oyster, ensuring they are well covered.

    Broil the Oysters

    Place the baking sheet with the filled oysters under the broiler in the preheated oven. Broil for about 5-7 minutes or until the topping is golden brown and bubbly.

    Remove the oysters from the oven and let them cool slightly. Serve warm with lemon wedges on the side.
