Start by chopping the onion, bell pepper, and green onions. Mince the garlic and slice the Andouille sausage.

Cook the Chicken
Heat 1 tablespoon of olive oil in a large skillet over medium heat. Season the chicken thighs with salt, black pepper, and Cajun seasoning. Add the chicken to the skillet and cook for about 6-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
