    Prepare the Ingredients

    Rinse the mussels under cold water, scrubbing the shells to remove any debris. Discard any mussels that are open and do not close when tapped. Mince the garlic and shallots, and chop the tomato. Zest and juice the lemon.

    Cook the Aromatics

    In a large pot, melt 2 tablespoons of butter over medium heat. Add the minced garlic and shallots, sautéing until they are translucent, about 2-3 minutes.

    Add Tomatoes and Stock

    Add the chopped tomato to the pot and cook for another 2 minutes. Pour in the chicken stock and bring to a simmer.

    Cook the Mussels

    Add the cleaned mussels to the pot, cover, and let steam for about 5-7 minutes or until the mussels have opened. Discard any mussels that remain closed.

    Finish the Dish

    Stir in the remaining butter, lemon juice, and chili flakes. Taste and adjust seasoning if necessary.

    Serve with Baguette

    Serve the mussels hot with grilled baguette slices for dipping.

    Prepare the Ingredients

    Rinse the mussels as described above. Mince the garlic and shallots, chop the tomato, and set aside. Measure out the cream and gumbo stock.

    Prepare the Saffron Cream

    In a saucepan, combine the cream, gumbo stock, saffron, and chili flakes. Heat gently over low heat until warmed through, but do not boil.

    Cook the Mussels

    In a separate pot, add a little water and steam the mussels as described above, but this time add the cooked saffron cream once the mussels have opened.

    Finish the Dish

    Stir the mussels in the saffron cream and gently mix to coat. Taste and adjust seasoning if necessary.

    Serve with Baguette

    Serve the saffron mussels hot with grilled baguette slices for dipping.
