    Prepare the Oysters

    Start by shucking the oysters carefully, ensuring to keep them in their shells. Rinse them under cold water and lay them on a bed of ice to keep them fresh.

    Wrap with Bacon

    Take a slice of bacon and cut it in half. Wrap each half around the oyster, securing it with a toothpick if necessary. Repeat this for all the oysters.

    Grill the Oysters

    Preheat your grill to medium-high heat. Place the bacon-wrapped oysters on the grill. Cook for about 5-7 minutes per side or until the bacon is crispy and the oysters are cooked through. Keep an eye on them to prevent burning.

    Prepare the Vin Blanc

    In a saucepan, heat the white wine over medium heat. Let it simmer for about 10 minutes until it reduces by half. Remove from heat and set aside.

    Make the Balsamic Reduction

    In another saucepan, add the balsamic vinegar and bring it to a boil. Lower the heat and let it simmer until it thickens and reduces by half, about 10-15 minutes. Stir occasionally to prevent sticking.

    On a serving platter, arrange the grilled oysters. Drizzle the white wine reduction over the oysters. Then, drizzle the balsamic reduction on top. Garnish with chopped fresh parsley and sprinkle with black pepper and salt to taste.
