Main Ingredients

Method

Preparation

  1. 1

    Prepare the Chicken

Pound the chicken breasts to an even thickness, about 1/2 inch thick. Season with salt and pepper on both sides.

  2. 2

    Dredge the Chicken

Set up a dredging station with flour in one dish, beaten eggs in another, and a mixture of Parmesan cheese, salt, and pepper in a third dish. Dredge each chicken breast first in flour, then dip in the eggs, and finally coat with the cheese mixture.

Cooking

  1. 3

    Cook the Chicken

In a large skillet, heat olive oil and 2 tablespoons of butter over medium-high heat. Once hot, add the chicken breasts and cook for about 4-5 minutes on each side until golden brown and cooked through. Remove chicken from the skillet and set aside.

  2. 4

    Make the Sauce

In the same skillet, lower the heat and add the chicken broth, scraping up any browned bits from the bottom. Stir in the lemon juice and the remaining 2 tablespoons of butter until melted.

  3. 5

    Combine and Serve

Return the cooked chicken to the skillet to warm through. Spoon sauce over the chicken and garnish with chopped parsley before serving.
