Shrimp Po'Boy Directions
1. Prepare the Shrimp
In a large bowl, soak the peeled and deveined shrimp in buttermilk for at least 30 minutes. This helps to tenderize the shrimp.
2. Mix the Coating
In another bowl, combine the flour, cornmeal, cayenne pepper, garlic powder, salt, and black pepper. Mix well.
3. Coat the Shrimp
Remove shrimp from the buttermilk and let excess drip off. Dredge the shrimp in the flour mixture until fully coated.
4. Heat the Oil
In a deep skillet or frying pan, heat vegetable oil over medium-high heat until shimmering.
5. Fry the Shrimp
Carefully add the coated shrimp to the hot oil in batches. Fry until golden brown and crispy, about 2-3 minutes per side. Remove and drain on paper towels.
6. Assemble the Po'Boys
Spread mayonnaise on the inside of each piece of French bread or hoagie roll. Layer with shredded lettuce, sliced tomatoes, and fried shrimp. Drizzle with hot sauce to taste.
7. Serve
Cut the Po'Boys in half and serve immediately while hot.
