1. Prepare the Roux

In a large pot, melt the butter over medium heat. Add the onion, bell pepper, and celery (the holy trinity) and sauté until softened, about 5 minutes.

2. Add Crawfish and Seasoning

Stir in the garlic and sauté for another minute. Add the crawfish tails, Cajun seasoning, bay leaves, tomato paste, and salt and pepper. Mix well.

3. Simmer
