Prepare the onions

Peel the large onions and slice them into 1/2-inch thick rings. Separate the rings and set them aside.

Make the batter

In a mixing bowl, combine 1 cup of all-purpose flour, 1 cup of cornstarch, 1 tsp of baking powder, 1 tsp of salt, 1 tsp of black pepper, and 1 tsp of cayenne pepper. Mix well. Gradually add 1 cup of cold water to the dry ingredients, whisking until a smooth batter forms.

Heat the oil

In a deep skillet or frying pan, heat 2 cups of vegetable oil over medium-high heat until it reaches 350°F (175°C).

Coat the onion rings

Dip each onion ring into the batter, ensuring it is fully coated. Allow any excess batter to drip off.

Fry the onion rings

Carefully place the battered onion rings into the hot oil, frying them in batches to avoid overcrowding. Fry for about 2-3 minutes on each side, or until they are golden brown and crispy.

Drain and serve

Once cooked, remove the onion rings from the oil using a slotted spoon and place them on a paper towel-lined plate to drain excess oil. Serve hot.
