Prepare the Potatoes

Wash and peel the russet potatoes. Cut them into uniform sticks, about 1/4 inch thick. Place the cut potatoes in a bowl of cold water to soak for at least 30 minutes to remove excess starch.

Frying

Heat the Oil

In a large heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.

Dry the Potatoes

After soaking, drain the potatoes and pat them dry with paper towels to remove excess moisture.

Fry the Potatoes

Carefully add a handful of dried potato sticks to the hot oil, being cautious not to overcrowd the pot. Fry them for about 5-7 minutes or until they are golden brown and crispy. Use a slotted spoon to remove the fries and place them on a plate lined with paper towels to drain excess oil.

Season the Fries

While the fries are still hot, sprinkle them with salt, paprika, and garlic powder to taste. Toss to evenly coat.
