Prepare the Potatoes

Wash and peel the Russet potatoes. Cut them into thin strips, about 1/4 inch thick. Rinse the cut potatoes in cold water to remove excess starch, then drain and pat them dry with paper towels.

Heat the Oil

In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a kitchen thermometer to check the temperature.

Fry the Potatoes

Carefully add a handful of the cut potatoes to the hot oil, making sure not to overcrowd the pot. Fry for about 5-7 minutes or until they are golden brown and crispy. Remove the fries with a slotted spoon and place them on paper towels to drain excess oil.

Season the Fries

While the fries are still hot, sprinkle them with salt, black pepper, and garlic powder to taste. Toss to ensure even coating.
