Prepare the Pasta and Sauce

    Cook the Pasta

    In a large pot of salted boiling water, cook the pappardelle pasta according to package instructions until al dente. Drain and set aside.

    Make the Cream Sauce

    In a large skillet over medium heat, sauté the chopped shallots until they become translucent. Add the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan, peas, salt, and black pepper. Cook for an additional 5 minutes until the sauce thickens slightly.

    Combine Pasta and Sauce

    Add the cooked pappardelle to the skillet with the cream sauce. Toss gently to coat the pasta evenly with the sauce.

Poach the Eggs

    Prepare to Poach Eggs

    Bring a pot of water to a gentle simmer. Add a splash of vinegar to help the eggs hold their shape while poaching.

    Poach the Eggs

    Crack each egg into a small bowl, then gently slide the egg into the simmering water. Poach for about 3-4 minutes until the whites are set but the yolks remain runny. Remove with a slotted spoon and drain on paper towels.

    Divide the pappardelle into bowls, top each with a poached egg, and garnish with shaved black truffle. Serve immediately.
