Prepare the Steak
Season the Angus sirloin steak with salt and black pepper on both sides. Let it sit at room temperature for about 30 minutes.
Sear the Steak
In a large skillet, heat olive oil over medium-high heat. Once hot, add the sirloin steak and sear for 4-5 minutes on each side for medium-rare, or until desired doneness. Remove the steak from the skillet and let it rest.
Finish the Sauce
Stir in the heavy cream and green peppercorns. Allow the sauce to simmer for another 5 minutes until it thickens slightly. Finish with butter and stir until melted and smooth.
Serve
Slice the rested sirloin steak against the grain and serve with the brandy peppercorn sauce drizzled over the top.
