    Prepare the Beurre Blanc

    In a saucepan, combine lemon juice and chopped fresh herbs. Bring to a simmer over medium heat and cook until reduced by half. Gradually whisk in butter until the sauce is smooth and creamy. Season with salt and black pepper to taste. Keep warm.

    Cook the Sablefish

    Preheat the oven to 375°F (190°C). Season the sablefish fillets with salt and black pepper. Heat a skillet over medium-high heat and add a little olive oil. Sear the fillets for 2-3 minutes on each side until golden brown. Transfer to the oven and bake for an additional 5-7 minutes, or until the fish is cooked through and flakes easily.

    Prepare the Topping

    In a mixing bowl, combine chopped Castelvetrano olives, sun-dried tomatoes, and pistachios. Mix well to combine.

    Plate the Dish

    Place the cooked sablefish on a plate, drizzle with the lemon and herb beurre blanc, and top with the olive, sun-dried tomato, and pistachio mixture. Serve immediately.
