Shoestring Fries

Method

Preparation of Shoestring Fries

    Cut the Potatoes

    Wash and peel the russet potatoes. Cut them into thin strips to create shoestring fries.

    Soak the Potatoes

    Soak the potato strips in cold water for at least 30 minutes to remove excess starch, then drain and pat dry.

    Heat the Oil

    In a deep frying pan, heat vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Carefully add the potato strips to the hot oil in batches. Fry until golden brown and crispy, about 3-4 minutes.

    Drain and Season

    Remove fries from the oil and drain on paper towels. While still hot, sprinkle with salt and P&B seasoning salt to taste.

Preparation of Spicy Remoulade

    Mix Ingredients

    In a bowl, combine mayonnaise, Dijon mustard, hot sauce, smoked paprika, minced garlic, and chopped parsley. Mix well until smooth.

    Serve

    Serve the spicy remoulade alongside the shoestring fries.
