    Cook Spaghetti

    Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, about 8-10 minutes. Reserve 1 cup of pasta water, then drain the spaghetti.

    Prepare Pancetta

    While the pasta cooks, dice the pancetta into small pieces. In a large skillet over medium heat, cook the pancetta until crispy, about 5-7 minutes. Remove from heat.

    Mix Eggs and Cheese

    In a medium bowl, whisk together the eggs, grated Pecorino Romano cheese, and black pepper until well combined.

Combining Ingredients

    Combine Pasta and Pancetta

    Once the spaghetti is cooked and drained, immediately add it to the skillet with the crispy pancetta. Toss to combine, ensuring the pasta is coated in the pancetta's fat.

    Add Egg Mixture

    Remove the skillet from the heat and quickly pour in the egg and cheese mixture. Toss vigorously to combine, adding reserved pasta water a little at a time until the sauce reaches a creamy consistency.

    Serve immediately, garnished with additional Pecorino Romano cheese, freshly cracked black pepper, and chopped parsley on top.
