Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, about 8-10 minutes. Reserve 1 cup of pasta water, then drain the spaghetti.

While the pasta cooks, dice the pancetta into small pieces. In a large skillet over medium heat, cook the pancetta until crispy, about 5-7 minutes. Remove from heat.

Mix Eggs and Cheese
In a medium bowl, whisk together the eggs, grated Pecorino Romano cheese, and black pepper until well combined.

Combine Pasta and Pancetta
Once the spaghetti is cooked and drained, immediately add it to the skillet with the crispy pancetta. Toss to combine, ensuring the pasta is coated in the pancetta's fat.
