Panna Cotta Base

Prepare Gelatin
In a small bowl, sprinkle the gelatin powder over cold water and let it sit for about 5-10 minutes until it blooms.

Heat Cream Mixture
In a saucepan, combine heavy cream, whole milk, and granulated sugar. Heat over medium heat, stirring occasionally, until the mixture is hot but not boiling.

Add Gelatin
Remove the saucepan from heat and stir in the bloomed gelatin until completely dissolved. Add vanilla extract and mix well.

Pour Into Molds
Pour the mixture into individual serving cups or molds. Allow them to cool to room temperature before transferring to the refrigerator.

Chill
Refrigerate the panna cotta for at least 4 hours or until set.
Berry Sauce

Prepare Berries
In a saucepan over medium heat, combine mixed berries, granulated sugar, and lemon juice.

Cook Sauce
Cook the mixture for about 10-15 minutes, stirring occasionally until the berries have broken down and the sauce thickens slightly.

Cool and Strain
Remove from heat and let it cool. Optionally, strain the sauce through a fine-mesh sieve to remove seeds if desired.
