Preparation

    Prepare the Spinach

    Wash the fresh spinach leaves thoroughly and remove any tough stems. Roughly chop the spinach and set aside.

    Prepare the Artichokes

    If using canned artichokes, drain and chop them into smaller pieces. If using frozen, thaw and chop them.

    Sauté Garlic

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant but not browned.

Cooking the Dip

    Combine Ingredients

    In a large mixing bowl, combine the sautéed garlic, chopped spinach, artichoke hearts, ricotta cheese, mozzarella cheese, cream cheese, grated Parmigiano Reggiano, salt, black pepper, and red pepper flakes. Mix well until all ingredients are evenly incorporated.

    Bake the Dip

    Preheat the oven to 350°F (175°C). Transfer the mixture into a baking dish and spread it evenly. Bake for 25-30 minutes, or until the dip is bubbling and golden on top.

    Serve the Dip

    Once baked, remove the dip from the oven and let it cool slightly. Serve warm with pasta chips for dipping.
