Preparation

    Cook the Pasta

    In a large pot, bring salted water to a boil. Add the tagliolini pasta and cook according to package instructions until al dente. Drain and set aside.

    Prepare the Pancetta

    In a skillet over medium heat, add the diced pancetta. Cook until crispy, about 5-7 minutes. Remove from skillet and drain on a paper towel.

    Sauté the Shrimp

    In the same skillet, add a little olive oil if needed. Add the wild caught Argentinian red shrimp and sauté for 2-3 minutes on each side until they turn pink and opaque. Remove from skillet and set aside.

    Prepare the Garlic and Spinach

    In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Then add the baby spinach and cook until wilted, about 2-3 minutes.

Making the Sauce

    Combine Ingredients

    In the skillet, add the unsalted butter, lemon juice, lemon zest, orange juice, and orange zest. Stir until the butter is melted and the ingredients are well combined.

    Season the Sauce

    Add salt and black pepper to the sauce and stir to incorporate.

Assembly

    Combine Everything

    Add the cooked tagliolini pasta, sautéed shrimp, wilted spinach, and crispy pancetta into the skillet. Toss everything together until coated in the sauce.

    Prepare the Panko Topping

    In a small bowl, mix the panko breadcrumbs with olive oil. Toast in a skillet over medium heat until golden brown, about 3-5 minutes.

    Serve

    Plate the shrimp scampi pasta, and sprinkle the crispy panko breadcrumbs on top. Serve immediately.
