Coleslaw Preparation

Make the Coleslaw
In a large mixing bowl, combine the shredded green cabbage and grated carrots.

Add Dressing
In a separate small bowl, whisk together the vegan mayonnaise, apple cider vinegar, maple syrup, salt, and black pepper until smooth.

Pour the dressing over the cabbage and carrot mixture. Toss everything together until the vegetables are well coated with the dressing.

Cover the coleslaw and refrigerate for at least 30 minutes to let the flavors meld.
Sandwich Assembly

Prepare the Bread
Take two slices of whole grain sandwich bread and spread a layer of vegan mayonnaise on one side of each slice.

On one slice of bread (mayonnaise side up), layer 2 slices of plant-based turkey, followed by 1 slice of provolone cheese, and a generous scoop of the chilled coleslaw.
