Cooking the Pasta

    In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the rest.

Preparing the Sauce

    Mix the Sauce Ingredients

    In a mixing bowl, whisk together the egg yolks, grated Parmesan cheese, black pepper, and a pinch of salt until well combined. Set aside.

Cooking Pancetta

    Cook the Pancetta

    In a large skillet over medium heat, add the diced pancetta. Cook until it becomes crispy and golden brown, about 4-5 minutes. Remove from heat.

Combining Ingredients

    Combine Pasta and Pancetta

    Add the drained penne pasta to the skillet with the cooked pancetta. Toss to combine, allowing the pasta to absorb the flavors of the pancetta.
