Cooking the Pasta

Cook the Penne
In a large pot, bring salted water to a boil. Add 400 grams of penne pasta and cook according to package instructions until al dente. Once cooked, reserve 1 cup of pasta water, drain the rest, and set aside.
Making the Sauce

Prepare the Sauce
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add 4 minced garlic cloves and sauté for about 1 minute until fragrant but not browned.

Add Spice and Tomatoes
Stir in 1 teaspoon of red chili flakes and cook for another 30 seconds. Then, add 800 grams of canned diced tomatoes and bring to a simmer. Cook for 10-15 minutes, allowing the sauce to thicken.

Season the Sauce
Once the sauce has thickened, add salt and black pepper to taste. Toss in 10 fresh basil leaves and stir to combine.
Combining Pasta and Sauce

Combine
Once the sauce is ready, add the cooked penne pasta to the skillet. If the sauce is too thick, add a little reserved pasta water until desired consistency is reached. Toss well to coat the pasta in the sauce.
Serving

Garnish and Serve
Serve the penne arrabbiata hot, garnished with 50 grams of grated Parmesan cheese and 5 fresh basil leaves. Enjoy!
