Cooking Pasta

Boil Water
In a large pot, bring water to a boil. Add the salt.

Cook Pasta
Add the spaghetti to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes.

Reserve Pasta Water
Before draining, reserve about 1 cup of pasta cooking water. Then, drain the spaghetti.
Making the Sauce

Cook Pancetta
In a large skillet over medium heat, add the pancetta. Cook until crispy, about 4-5 minutes. Remove from heat and set aside.

Mix Eggs and Cheese
In a bowl, whisk together the eggs and grated Parmesan cheese until well combined. Set aside.
Combining Ingredients

Combine Pasta and Pancetta
Add the drained spaghetti to the skillet with the pancetta (do not turn the heat back on).

Add Egg Mixture
Quickly pour the egg and cheese mixture over the pasta, tossing continuously to ensure the eggs don’t scramble. Add reserved pasta water a little at a time until you reach a creamy consistency.

Season with black pepper to taste and toss in fresh parsley for garnish.
