Panna Cotta Base

Prepare the Gelatin
In a small bowl, sprinkle the gelatin powder over the cold water. Let it sit for about 5 minutes until it becomes gelatinous.

Heat the Cream Mixture
In a saucepan, combine the heavy cream, whole milk, and granulated sugar. Heat over medium heat, stirring until the sugar dissolves and the mixture is hot but not boiling.

Add Vanilla and Gelatin
Remove the saucepan from heat and stir in the vanilla extract. Add the gelatin mixture to the hot cream mixture, stirring until the gelatin is completely dissolved.

Pour into Molds
Pour the mixture into individual serving glasses or molds. Allow them to cool to room temperature before refrigerating.

Chill
Cover the glasses with plastic wrap and refrigerate for at least 4 hours, or until set.
Berry Sauce

Prepare the Berries
In a medium saucepan, combine the mixed berries, granulated sugar, and lemon juice.

Cook the Sauce
Cook over medium heat, stirring gently until the berries break down and the mixture thickens slightly, about 10 minutes.

Cool and Strain (Optional)
Remove from heat and let the sauce cool. If desired, strain through a fine mesh sieve to remove the seeds.

Serve
Once the panna cotta is set, top each serving with the berry sauce just before serving.
