    Begin by washing the russet potatoes thoroughly under cold water to remove any dirt. Peel the potatoes using a vegetable peeler, if desired, and cut them into even-sized strips, approximately 1/4 inch thick.

    Place the cut potato strips into a large bowl filled with cold water and let them soak for at least 30 minutes. This helps remove excess starch and results in crispier fries.

Frying

    Heat the Oil

    In a large, deep pot or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can use a thermometer to check the temperature.

    Dry the Potatoes

    After soaking, drain the potatoes and pat them dry using a clean kitchen towel or paper towels. This step is crucial to avoid oil splatter during frying.

    Fry the Potatoes

    Carefully add small batches of the dried potato strips to the hot oil. Fry them for about 5-6 minutes or until they are golden brown and crispy. Avoid overcrowding the pot.
