Crust

Method

Crust

  1. 1

    Prepare the Crust

Preheat your oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs and sugar. Pour in the melted butter and mix until the crumbs are evenly coated.

  2. 2

    Form the Crust

Press the mixture into the bottom of a 12-cup muffin tin or mini cheesecake pan, making sure to pack it down firmly. Bake for 8-10 minutes until set, then remove from the oven and let cool.

Cheesecake Filling

  1. 3

    Prepare the Filling

In a large mixing bowl, beat the softened cream cheese until smooth using an electric mixer. Gradually add in the sugar and continue mixing until fully incorporated.

  2. 4

    Add Remaining Ingredients

Add the sour cream, vanilla extract, eggs, and amaretto liqueur to the cream cheese mixture. Beat until everything is well combined and smooth.

  3. 5

    Fill the Crust

Pour the cheesecake filling over the cooled crusts, filling each cup until just about full. Tap the muffin tin gently on the counter to remove any air bubbles.

  4. 6

    Bake the Cheesecakes

Bake in the preheated oven for 18-20 minutes, or until the centers are set but still slightly jiggly. Remove from the oven and let cool at room temperature for about 30 minutes.

  5. 7

    Chill

Refrigerate the cheesecakes for at least 2 hours, or until completely chilled and set.

Amaretto Cherries

  1. 8

    Prepare the Cherries

In a medium saucepan, combine the pitted cherries, sugar, and amaretto liqueur. Cook over medium heat, stirring occasionally, until the cherries are soft and the mixture is syrupy, about 10-15 minutes.

  2. 9

    Cool the Cherries

Remove from heat and let the cherry mixture cool to room temperature. This can be done while the cheesecakes are chilling.

Assembly

  1. 10

    Serve

Once the cheesecakes are fully chilled, remove them from the muffin tin. Top each mini cheesecake with the amaretto cherries before serving.
