Turkey Preparation

Prepare the Turkey
Preheat your oven to 325°F (165°C). Rinse the turkey under cold water and pat dry with paper towels.

Season the Turkey
In a small bowl, mix together olive oil, salt, black pepper, garlic powder, onion powder, and dried thyme. Rub this mixture all over the turkey, ensuring it's well coated.

Roast the Turkey
Place the turkey in a roasting pan and cover it loosely with aluminum foil. Roast in the preheated oven for about 13-15 minutes per pound, or until the internal temperature reaches 165°F (74°C). Remove the foil for the last 30 minutes for a crispy skin.

Rest and Shred
Once cooked, remove the turkey from the oven and let it rest for at least 30 minutes. After resting, use two forks to shred the meat into bite-sized pieces.

Slice the Vegetables
While the turkey is resting, slice the tomato and onion thinly, and rinse the lettuce leaves.

Assemble the Sandwich
Take a slice of bread and spread 1 tablespoon of mayonnaise on it. Layer on ¼ cup of lettuce, a few slices of tomato, some onion, and 1 slice of provolone cheese. Add a generous portion of the shredded turkey on top.

Top with another slice of bread and repeat the process for the remaining sandwiches.
