Preparing the Base

    Combine Milk and Cream

    In a medium saucepan, combine the milk and heavy cream. Heat over medium heat until the mixture is warm but not boiling.

    Whisk Sugar and Eggs

    In a separate bowl, whisk together the granulated sugar, egg yolks, and a pinch of salt until the mixture is pale and slightly thickened.

    Temper the Egg Mixture

    Slowly pour the warm milk and cream mixture into the egg yolk mixture, whisking constantly to prevent the eggs from scrambling. Once combined, return the mixture to the saucepan.

    Cook the Custard

    Cook the mixture over medium-low heat, stirring constantly with a wooden spoon until it thickens enough to coat the back of the spoon (about 5-7 minutes). Do not let it boil.

    Add Vanilla

    Once thickened, remove from heat and stir in the vanilla extract.

    Cool the Base

    Transfer the mixture to a bowl and let it cool to room temperature. Then cover and refrigerate for at least 4 hours or overnight.

Flavoring the Gelato

    Decide on your desired flavor. For chocolate gelato, melt the chocolate, and for fruit gelato, prepare your fruit puree. For nut gelato, use nut paste.

    Once the base is chilled, stir in your chosen flavoring ingredient until evenly combined.

Churning the Gelato

    Pour the flavored mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

    Freeze the Gelato

    Transfer the gelato to an airtight container and freeze for at least 2 hours to firm up before serving.
