Turkey Preparation

Roast the Turkey
Preheat the oven to 325°F (165°C). Rinse the turkey under cold water and pat dry with paper towels. Rub the turkey all over with olive oil, then season generously with salt, black pepper, garlic powder, and onion powder.

Rest and Pull Turkey
Once cooked, remove the turkey from the oven and let it rest for at least 30 minutes. After resting, use two forks to pull the turkey meat into shreds.
Coleslaw Preparation

Combine Coleslaw Ingredients
In a large bowl, combine the shredded cabbage and grated carrot.

Make the Dressing
In a separate bowl, mix together mayonnaise, apple cider vinegar, sugar, salt, and black pepper until smooth.

Mix Coleslaw
Pour the dressing over the cabbage and carrot mixture. Toss well to combine and refrigerate for at least 1 hour before serving to allow flavors to meld.

Assemble the Sandwich
On each sandwich roll, layer pulled turkey, a slice of provolone cheese, a generous scoop of coleslaw, and a drizzle of Russian dressing. Spread mayonnaise on the top half of the roll.

Close the sandwich and serve immediately, or wrap in foil and keep warm until ready to serve.
