Prepare the Steak
Trim any excess fat from the ribeye steak and slice it into thin strips against the grain.

Cook the Vegetables
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and mushrooms, seasoning with salt and pepper. Sauté for about 5-7 minutes until they are softened and slightly caramelized. Add the sliced peppers and cook for another 3-4 minutes. Remove from skillet and set aside.

Cook the Steak
In the same skillet, add the remaining tablespoon of olive oil and increase the heat to high. Add the sliced ribeye steak in a single layer and cook for about 3-4 minutes, stirring occasionally, until browned and cooked to your preferred doneness. Return the sautéed vegetables to the skillet with the steak and mix well.

Assemble the Cheesesteaks
To assemble, slice the hoagie rolls in half lengthwise without cutting all the way through. Spoon the steak and cheese mixture into each roll and serve immediately.
