Method

Preparation

  1. 1

    Prepare the Vegetables

Slice the onion and mushrooms thinly. If using whole peppers, slice them into thin strips.

  2. 2

    Prepare the Steak

Trim any excess fat from the ribeye steak and slice it into thin strips against the grain.

Cooking

  1. 3

    Cook the Vegetables

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and mushrooms, seasoning with salt and pepper. Sauté for about 5-7 minutes until they are softened and slightly caramelized. Add the sliced peppers and cook for another 3-4 minutes. Remove from skillet and set aside.

  2. 4

    Cook the Steak

In the same skillet, add the remaining tablespoon of olive oil and increase the heat to high. Add the sliced ribeye steak in a single layer and cook for about 3-4 minutes, stirring occasionally, until browned and cooked to your preferred doneness. Return the sautéed vegetables to the skillet with the steak and mix well.

  3. 5

    Melt the Cheese

Lower the heat to medium-low. Place the slices of white American cheese on top of the steak and vegetable mixture. Cover the skillet with a lid and let it sit for 2-3 minutes until the cheese is melted.

Assembly

  1. 6

    Assemble the Cheesesteaks

To assemble, slice the hoagie rolls in half lengthwise without cutting all the way through. Spoon the steak and cheese mixture into each roll and serve immediately.
