Preparing the Chicken

    Prep the Chicken

    Start by placing each chicken breast between two sheets of plastic wrap and pound them to an even thickness, about 1/2 inch thick.

    Bread the Chicken

    Set up a breading station with three shallow dishes: one with flour (seasoned with salt and pepper), one with beaten eggs, and one with bread crumbs. Dredge each chicken breast in flour, dip in egg, and coat with bread crumbs.

    Cook the Chicken

    In a large skillet, heat olive oil over medium-high heat. Add the breaded chicken breasts and cook for about 4-5 minutes on each side until golden brown and cooked through. Remove from skillet and keep warm.

Cooking the Pasta

    Boil the Linguine

    In a large pot of boiling salted water, cook the linguine according to package instructions until al dente. Drain and set aside.

Making the Sauce

    Sauté Garlic and Onion

    In the same skillet used for the chicken, add minced garlic and chopped red onion. Sauté for about 2-3 minutes until fragrant and the onion is translucent.

    Add Liquids and Capers

    Pour in the chicken broth and fresh lemon juice, then add the capers. Bring the mixture to a simmer, scraping any browned bits from the bottom of the pan. Let simmer for about 5 minutes.

    Finish the Sauce

    Return the chicken to the skillet, spoon the sauce over it, and let it simmer for an additional 2-3 minutes. Stir in chopped parsley before serving.

Serving

    Combine and Serve

    Plate the cooked linguine, top with the chicken piccata, and drizzle with lemon garlic sauce. Garnish with extra parsley if desired.
