Crust Preparation

Preheat Oven
Preheat your oven to 350°F (175°C).

Mix Crust Ingredients
In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.

Form Crust
Press the mixture firmly into the bottom of a 9-inch round springform pan to form an even layer.

Bake Crust
Bake the crust in the preheated oven for about 8-10 minutes, until lightly browned. Remove from the oven and let cool.
Cheesecake Filling Preparation

Beat Cream Cheese
In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

Add Sugar and Mix
Gradually add the granulated sugar while continuing to beat until well combined.

Incorporate Sour Cream & Vanilla
Add the sour cream and vanilla extract, mixing until completely blended.

Add Eggs
Add the eggs one at a time, mixing on low speed after each addition until just combined. Do not overmix.

Add Flour
Sprinkle in the flour and mix gently until fully incorporated.

Pour Filling into Crust
Pour the cheesecake filling over the cooled crust in the springform pan.

Bake Cheesecake
Bake in the preheated oven for about 50-60 minutes, or until the center is set but still slightly jiggly.

Cool Cheesecake
Turn off the oven and crack the door open. Let the cheesecake cool in the oven for 1 hour. Then refrigerate for at least 4 hours or overnight.
Amaretti Cherries Preparation

Combine Ingredients
In a medium saucepan, combine the pitted cherries, Amaretto liqueur, and granulated sugar.

Simmer Cherries
Bring the mixture to a simmer over medium heat, stirring occasionally. Cook for about 10-15 minutes until the cherries are tender and the sauce thickens slightly.

Cool and Serve
Remove from heat and let cool. Serve over the chilled cheesecake.
