Preparation of Beef

    Season the Beef

    In a bowl, combine the beef sirloin tips with olive oil, salt, black pepper, and chopped fresh rosemary. Mix well to coat the beef evenly. Let it marinate for at least 15 minutes.

    Sear the Beef

    In a large skillet over medium-high heat, add the marinated beef tips. Sear them for about 5-7 minutes or until browned on all sides. Remove the beef from the skillet and set aside.

Cooking Gnocchi

    Cook the Gnocchi

    In a large pot of boiling salted water, add the store-bought gnocchi. Cook according to package instructions until they float to the surface, usually about 2-3 minutes. Drain and set aside.

Making the Sauce

    Sauté the Vegetables

    In the same skillet used for the beef, add a little more olive oil if needed. Sauté the chopped red onion, minced garlic, and sliced mushrooms over medium heat until the onions are translucent and the mushrooms are browned, about 5-7 minutes.

    Add Wine and Tomatoes

    Pour in the red wine and let it simmer for 2 minutes. Then, add the canned crushed tomatoes, Italian seasoning, and sugar. Stir well and bring to a simmer.

    Combine Ingredients

    Return the seared beef tips to the skillet and let everything simmer together for an additional 10 minutes, allowing the flavors to meld.

Final Assembly

    Combine Gnocchi and Sauce

    Add the cooked gnocchi to the skillet with the beef and sauce. Gently toss to coat the gnocchi with the sauce. Let it cook together for another 2-3 minutes.
