Prepare the Beef
Slice the American Wagyu beef into thin strips against the grain to ensure tenderness.

Cook the Vegetables
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and cook until translucent, about 5 minutes. Add the mushrooms and cook for an additional 3-4 minutes until they are tender. If using, add the hot and sweet peppers and sauté for another 2 minutes. Season with salt and black pepper. Remove the vegetable mixture from the skillet and set aside.

Cook the Beef
In the same skillet, add the remaining tablespoon of olive oil over medium-high heat. Add the sliced American Wagyu beef and cook for 3-5 minutes, stirring occasionally, until browned and cooked through. Season with additional salt and black pepper to taste.

Combine Ingredients
Return the vegetable mixture to the skillet with the beef. Stir well to combine and heat through for about 2 minutes.

Melt the Cheese
Lay the slices of white American cheese over the beef and vegetable mixture in the skillet. Cover with a lid and let it cook for 1-2 minutes until the cheese melts.

Assemble the Cheesesteaks
Slice the hoagie rolls lengthwise but not all the way through. Fill each roll generously with the Wagyu beef and vegetable mixture, ensuring each sandwich has plenty of melted cheese.

Serve hot with additional hot or sweet peppers on the side, if desired.
