    Prepare the Seafood

    Rinse the catfish fillets under cold water and pat dry with paper towels. Season both sides with salt and black pepper.

    Prepare the Shrimp and Crab Meat

    In a medium bowl, combine the peeled shrimp and lump crab meat. Set aside.

Cooking

    Cook the Catfish

    In a large skillet over medium heat, melt 2 tablespoons of butter. Add the seasoned catfish fillets and cook for about 5-6 minutes on each side, or until golden brown and cooked through. Remove from skillet and set aside.

    Make the Sauce

    In the same skillet, add the remaining 2 tablespoons of butter. Once melted, add minced garlic and shallots. Sauté for 2-3 minutes until fragrant and translucent.

    Deglaze with Wine

    Pour in the white wine and bring to a simmer. Cook for about 3-4 minutes, allowing the alcohol to evaporate.

    Add Cream and Seasonings

    Stir in the heavy cream, Cajun seasoning, salt, and black pepper. Simmer for another 5 minutes, stirring occasionally, until the sauce thickens slightly.

    Add Shrimp and Crab

    Gently fold the shrimp and crab meat into the sauce, cooking for an additional 3-4 minutes, or until the shrimp is opaque and cooked through.

    Combine and Serve

    Return the cooked catfish fillets to the skillet, spooning the sauce over the top. Cook for an additional 2 minutes to heat everything through.
