Method

Preparation of Vegetables

  1. 1

    Shredding Cabbage

Remove the outer leaves of the cabbage and cut it into quarters. Use a sharp knife or a mandoline slicer to shred the cabbage into thin strips. Measure out 4 cups of shredded cabbage.

  2. 2

    Grating Carrots

Peel the carrot and use a box grater or food processor to grate it until you have 1 cup of grated carrots.

  3. 3

    Slicing Bell Pepper

Remove the stem and seeds from the red bell pepper. Slice it into thin strips, ensuring you have enough to measure out 1 medium bell pepper.

Making the Dressing

  1. 4

    Combining Ingredients

In a large mixing bowl, combine 1 cup of mayonnaise, 2 tablespoons of apple cider vinegar, 1 tablespoon of sugar, 0.5 teaspoon of salt, and 0.25 teaspoon of black pepper.

  2. 5

    Mixing the Dressing

Whisk the dressing ingredients together until well combined and smooth.

Assembling the Coleslaw

  1. 6

    Combining Vegetables and Dressing

In the bowl with the dressing, add the shredded cabbage, grated carrots, and sliced red bell pepper. Toss everything together until the vegetables are evenly coated with the dressing.

  2. 7

    Adding Toppings

Add 0.5 cup of chopped peanuts to the coleslaw mixture. If desired, add 0.25 cup of chopped fresh cilantro for extra flavor. Toss gently to combine.

Chilling and Serving

  1. 8

    Chilling the Coleslaw

Cover the bowl with plastic wrap and refrigerate the coleslaw for at least 30 minutes to allow the flavors to meld.

  2. 9

    Serving

Serve the coleslaw cold as a side dish with your favorite main courses or enjoy it on its own.
